“POINTAGE” is derived from the French word for “fermentation”.
It is a word that I have heard countless times when I was receiving training on French Boulangerie at Le Cordon Bleu Japan.
For me, “POINTAGE” is the most crucial part in bread-making. It is a truly magical process that requires both patience and care.
You won’t find indulgent pastries here… Each bread is made with reduced amount of sweetener or fat, as I like to celebrate and respect the natural taste of each ingredient.
But all I wish, is to create “deliciousness” that will bring a little happiness to you :)
